Fresh Cranberry Scones



Hi there! I hope you are doing good today!


I had a bag of fresh organic cranberries and wanted to use them.

So, I baked something I have never tried making before - scones!

I love scones and get them mainly at Panera Bread. They are perfection with coffee. To me, they taste like a cross between a cookie, a pancake, and pie crust.


I decided to try making my own.





My daughter really loves baking with me. In fact, she begs me to bake things with her about once a week. I think she sure is picking up a lot of baking skills for being only 5 years old. She will turn 6 on Thanksgiving this year. :)




Here is how we made ours...

In a large bowl, mix together 1 and 3/4 cup unbleached flour, 1/3 cup sugar, 3 teaspoons baking powder, and 1/2 teaspoon baking soda.


I cut in 5 TBS of cold butter (diced) using my hands until mixture became crumbly.


Then, I added in 1 cup of fresh cranberries.

(I cut each cranberry in 4 quarters, then measured out a cup.)




My daughter folded in the cranberries and also mixed in 2/3 cup of buttermilk, 1 and 1/2 TBS of fresh lemon juice, and 2 tsp of lemon zest.


She loves to dump in ingredients to the bowl and stir things around. :)





Turn the dough out onto a lightly floured surface and shape into a disc.




Cut scones into eighths and place on a parchment lined baking sheet.

400 degree oven

They bake up fast - about 15 minutes!




While the scones were cooling, I made a super quick sugar glaze.

The glaze balances out the tart fresh berries well.

Sift 1 cup of powered sugar and mix in 2 TBS of water. Drizzle as much or little as you like over the top of the scones.

Yum!


These are so easy to make!

 They would be wonderful for a Sunday breakfast.

  2. Your daughter reminds me so much of my own daughter when she was younger. She loved to bake things as well, still does, but hasn't got so much time for it anymore due to a lot of schoolwork. I have to admit I miss it sometimes as well. So, all I can say: Enjoy this baking together.
    I've been wanting to bake scones. The problem is I've never had one, so I don't really know what they should taste like ;-) but your recipe looks delicious. Especially with the cranberries! I'll try this!

  8. Good recipe - they're in the oven now. Either I made a very big mistake or the flour quantity is incorrect - the mix was more like cake mix until I doubled the flour quantity
