Today I made Martha Stewart's strawberry cupcakes from her cupcake book.
Fresh strawberries are used in both the batter and the meringue buttercream frosting. Decadent!
Please enjoy some photos, but please excuse my horrible frosting job. I am new to piping and am still in practice mode. A large, open star tip would've been a lot nicer for these.
This is a labor intensive recipe, but the scrumptious sweet strawberry taste sure is worth it! They would be so nice for a special occasion. I made these with a hand-held mixer. I probably wouldn't make these again until I get a stand mixer.
It is chilly here in the Chicago suburbs. March is always still cold here. The past couple days I have seen robin birds bobbing by, so winter is out of here soon, thank goodness. I am so eager and filled with anticipation for springtime!

Those look mighty tasty Lara. I don't think I'd be able to stop at one. I made Martha Stewart's buttercream frosting one year for my daughter's birthday cupcakes and it was an absolute nightmare. You are certainly right about it being labor intensive.
